As you say, Mary Jane was the daughter of Mary Ellen's brother John.

This is her birth:

Lancashire Birth indexes for the years: 1879
Surname Forename(s) Sub-District Registers At Mother's Maiden Name Reference
PARKER Mary Jane Oldham Below Town Oldham HONSTIN OBT/128/164

John and Sarah Ann's marriage

Lancashire Marriage indexes for the years: 1869
Surname Forename(s) Surname Forename(s) Church / Register Office Registers At Reference
PARKER John HOUSTIN Sarah A Oldham, St. Mary Oldham CE235/20/400

As this record shows, they did have a daughter 'Elizabeth' but the year of birth does not fit:

Lancashire Birth indexes for the years: 1872
Surname Forename(s) Sub-District Registers At Mother's Maiden Name Reference

PARKER Elizabeth Oldham Below Town Oldham HOUSTIN OBT/95/105

DID THIS ELIZABETH DIE ??

Lancashire Death indexes for the years: 1877
Surname Forename(s) Age Sub-District Registers At Reference
PARKER Elizabeth 5 Oldham Below Town Oldham OBT/86/11

I believe you do have the correct Mary Ellen but we are 'asuming' that Joseph is the same one as is with Elizabeth on the following census (he probably is!) and and we are 'assuming' that the Elizabeth with the Whittaker's is the sister of Mary Jane and also the mother of Joseph.

I think our 'assumptions' may be wrong.

I am leaning back towards the Elizabeth I was folling originally with parents James and Margaret

I have no doublt that the family in Oldham is also connected but I don't yet know how!

I also have not yet found the link to the Whittakers.

I will look further.................

P.S.

These are further children to John and Sarah's marriage:

Lancashire Birth indexes for the years: 1874

This appears to be Sarah's death, and that of her daughter Lilly?

I cannot be sure of a death for John, neither can I find him for certain after that 1881 census.

This is James Parker (father of Elizabeth) on 1861:

1861 England, Wales & Scotland Census Transcription

**James Parker Son Unmarried Male 21 1840 Mechanic Longridge, Lancashire, England
Mary Parker Daughter Unmarried Female 19 1842 Cotton Rover Chipping, Lancashire, England

Francis is also a widon on 1851 and I haven't found her yet on 1841 but these baptisms whow her to have been married to a William Parker:

Baptism: 9 Jun 1839 St Lawrence, Longridge, Lancashire, England
James Parker - [Child] of William Parker & Fanny
Abode: Alston
Occupation: Husbandman
Baptised by: F Maude
Register: Baptisms 1813 - 1840, Page 193, Entry 1540

Baptism: 14 May 1837 St Bartholomew, Chipping, Lancashire, England
Elizabeth Parker - D of William Parker & Fanny
Abode: Bradley, Chipping
Occupation: Husbandman
Baptised by: E. Wilkinson, Vicar
Register: Baptisms 1813- 1848 from the Bishop's Transcripts, Page 143, Entry 1141
Source: LDS Film 1502473

And, I believe this would have been their marriage:

Marriage: 31 Aug 1836 St Bartholomew, Chipping, Lancashire, England
William Parker - Bachelor, this Parish
Fanny Topham - (X), Spinster, Bleasdale of the Parish of Lancaster
Witness: John Procter; John Parker
Married by Licence by: Edmund Wilkinson, Vicar
Register: Marriages 1813 - 1837 from the Bishop's Transcripts, Page 109, Entry 326

Still haven't found out how any of all this connects to William Whittaker and Caroline Turner but I am convinced that it will somewhere!

I don't know where this is leading but I have been following 'this' Elizabeth Parker who I am almost sure is the correct one ?

Baptism: 28 Feb 1864 All Saints, Preston, Lancashire, England
Elizabeth Parker - [Child] of James Parker & Margaret

Occupation: mechanic
Baptised by: Geo. Beardsell
Register: Baptisms 1848 - 1866, Page 257, Entry 2055

I believe this is her on 1881:

Grace Parker Daughter Single Female 8 1873 Scholar Preston, Lancashire, England
William Parker Son Single Male 5 1876 Scholar Preston, Lancashire, England
Mary J Parker Daughter Single Female 2 1879 - Preston, Lancashire, England

This would be her parent's marriage:

Marriage: 24 Jun 1861 St John, Preston, Lancashire, England
James Parker - 22, Mechanic, Bachelor, Bedford St
Margaret Howarth - (X), 21, Weaver, Spinster, Egbert St

NOTE the name HOWARTH as there is a Hary Howarth with Elizabeth Parker and William Whittaker on the 1861 !!

This is Margaret and family on 1851:

Ann Howarth Daughter Married Female 22 1829 Frame Tenter Cotton Lancashire, England

Here she is again on 1861 (though there are lots of transcription errors!!):

Catherin Blackburn Boarder Married Female 37 1824 Cotton Finisher Preston, Lancashire, England

NB - on above 'John' is Margaret's sister ANN and the surname 'Hary' should be HOWARTH + William is 'William Hary or William Henry !!) - Could this be the same 'Hary Howarth??

Will be back in a minute with the 'Parkers'..................

It is confusing, but I think you need to trace who William is and trace his siblings families. Elizabeth could also be a niece of his wife's family- so there is lots to look into. William may also be a great uncle-
This is just one of many possible related connections:
