I don't know if this is the same John Lethbridge from Buckland Monachorum you mentioned. However if it is, and he is remarrying to this Sarah in 1806, and if the death in 1818 is hers, then he is unlikely to be the father of Francis John born 1807:

However John is a very common forename, so there may be more than one man of that name living and marrying in Buckland Monachorum.

I wondered about this census entry for a John Lethbridge from Buckland living in London:

He is a joiner, which sits well with the house carpenter on the 1814 Plymouth baptism.

Wife's name is Jane. She may have been a later acquisition, but don't forget that Jenny was a diminutive of Jane, as well as a dimutive of Jennifer. So it's just possible that Jane could be the Jenny of the 1814 baptism, and the Jenny Lovis who married in Buckland Monachorum in 1797.
