Not my Mary Guest, I'm afraid - but thank you.
My Mary was Mary Waters Guest - became Mary (Waters) Thomas. I think she may well have invented or adopted the surname Cook - adopted seems likely because I've been unable to find a marriage to a Mr Cook yet it seems possible that this is Jessie's 'real' father's surname as why would Mary have not registered Jessie under her surname (Guest)?

The two grooms on that 1884 marriage should be Benjamin Ackary and Michael Hart.
For some reason Benjamin has been mistranscribed as Henrietta on some sites.

I know there was no father registered for Jessie's birth but I'm wondering where Mary (the mother) got the surname Cook from.
I've looked at the marriages in Liverpool and found a Mary Guest marrying in 1884 and the only other Mary Guest born there before this would have been too young to marry in 1884. I'm wondering whether my Mary Guest was first married in 1884 but there is no indication of the spouse's name in the marriage registrations - it lists probably could have been to one of the following - then gives one man's name and three females' names.
Can anyone help me with the 1884 spouse's name, please?

An update to all who helped me with this.
I tracked two Jessie Cooks down, both born in Liverpool at similar times (188/9).
One died and, not finding what happened to the other, took a leap of faith and thought that this could be my grandmother who, in the 1891 Census was listed as Jessie C Thomas and whose marriage certificate gives her name as Jessie Cooke Thomas. I sent for Jessie's birth certificate and it arrived - yes, it was my grandmother, born 21 July 1888 at Liverpool. Her mother gave her name as Mary Cook but I can't find a marriage (she was born Mary Waters Guest) and there's no father's name on my gran's birth certificate so Mary may have given a false name or used my gran's father's surname as her own.
Thank you everyone for your help.

Sorry, mgnv, I did not reply to your June message and I've only just discovered this oversight while checking everything.
I found that September 1888 birth for Jessie Cook at W Derby and my cousin's checking it.

Seeing as they were living in West Derby RD in 1891, I checked there for Jes* b 1888q3 or 1889q3. There was a
Births Sep 1888 (>99%) COOK Jessie W Derby 8b 426
I don't know the relevance of this.

Jesse was Jessie (my gran) but she was born on 21 July 1888 or 1889 and we assumed it was at Liverpool or perhaps Manchester where she worked at one time. Although she gives Joseph Henry Thomas as her father on her marriage cert she gives her own name as Jessie Cooke Thomas. The plot thickens.
By the way, you included Sarah Jane Oates and Harry Spencer on the Thomas marriage info. Were they bridesmaid/best man, by any chance? I'm new to this and not quite au fait with the way everything is recorded.

If the 1891 marriage is correct then Jessie was born beforehand so may not be a Thomas. ( perhaps she was born Jessie Cooke and simply adopted the surname Thomas after her mother married.
Or.. she IS a Thomas but to a different mother.
Have sent pm regarding the other name appearing on the marriage record.

You have to buy the actual certificate to see whether someone is noted as spinster or widow, or the occupation.
You are lucky in that David has found what seems to be "your" couple on the Lancashire records on ancestry. But that is all that you will see without buying the certificate.
