If you want Jersey, try the Jersey Archive who hold all the older baptism & burial records, or each Parish Church hold their own more recent records, or try the Jersey Registrar's Office who hold all the copies of the Islands Birth Marriage and Death Certificates, but they will need a lot of information, and you will have to do this in writing (letter or email) and pay upfront for any certificates you need. At present the only way you can pay for Certificates. is by cash or sterling cheque which can be difficult if you are outside the UK. All the staff are very helpful. There is also a local Family History Society who may be able to help you.

Another option is to make enquiries at the Prioux Library in St Peter Port. They charge by the time spent searching records, but are really helpful. Its best to Email them first to get an outline quote. They hold all the burial records of the parishes in Guernsey.
