recipes - vegetarian - low calories

Does anybody have some recipes for low calorie meals for vegetarians please? My son has to lose some kilos because of his back trouble and I'd like to help him. I do have vegetarian cooking books but no really low calorie. I find this most difficult, especially as cheese is full of fat. No fish and no meat.

How about Vegetable Chilli: Steam fry one chopped Onion, 1 Chopped Green Pepper 1 Courgette 2-oz Sliced Mushrooms 2-oz Celery or Celeriac for five minutes. Add 1 tin Chopped Tomatoes 1 tin Red Kidney Beans (well rinsed) and 2 tablespoons of Worcestershire Sauce 1 teaspoon of Chilli Powder Salt to taste Cook for 30 Minutes Tip into casserole dish and top with par-boiled sliced potatoes, brushed lightly with olive oil. Place under hot grill until golden brown.

Thanks to Kate, Kathy and Di for your recipes. I'll have to try these out on my son. He doesn't live at home anymore - he's 47 and a real bachelor! I always cook for him when I visit, so will be trying these recipes out soon. Sylvia xxx

Don't forget eggs. They are good for slimming and very filling. Also veggie curry made with a low calorie sauce and small portions of rice is good as are stir-fries. Make a soup with lots of different veggies - carrots, celery, leeks, green beans, tomatoes add some peas or broad beans. This can be frozen in daily portions, a very low calorie filler. Weight watchers books have some recipes they also have recipes on their web-site.

It dosn,t really matter what your son eats as long as it,s healthy,the things already suggested ,it,s when he eats and how much.breakfast first to kick in the digestive system,followed by three other little meals through the day no carbohydrates after five thirty because the body can,t burn the energy off in time for bed.Eggs,are good ,Columbus,if you can get them as they are full of omega 3 oil which will replace the oil,he can,t get from the fish.Dutch cheese as it,s half fat along with a half fat mature cheddar [already mentioned]Nibbles in between meals ,fruit and celery,.I had to loose as well for the same sort of reasons ,and have lost two stone over three months so here,s hoping for you.Fred.
