Oh heck Jules - I'm one of those chuck it in and see what comes out cooks! Make the suet crust like Maz said but add some dried mixed herbs to the flour and suet before making the dough (I've got rosemary in mine tonight - run out of mixed herbs lol), fry off some bacon that has been cut into small pieces. Put the dough on a floured surface and push out into a rough oblong shape. Put the bacon in the middle and close and pinch the dough together over the top - now it looks like a big fat sausage. Wrap in buttered foil (marge will do) - leaving room for expansion (it now looks like a big foil wrapped sweet). I cook mine on the hob in a metal oval roaster (with a lid). Plonk it in the pan and add boiling water to half way up the pan - stick the lid on and steam for about 1 1/2 hours - longer won't hurt. I like liver and bacon dumpling too - but my husband doesn't like liver! You can shove anything in a dumpling. I like my bacon dumpling with a little parsley sauce and a load of mashed spuds. Goes well with cabbage and greens. Magsx

Maz Dumplings 6 heaped tablespoons of SR flour half box of Atora suet pinch of salt teaspoon of baking powder enough water to make a stiff dough split into 6-8 balls and place in stew in oven for about 20-30 mins YUMMY! Roasted Suet Puddings Recipe as above but add more water until you have a dropping consistency. Cook as you would Yorkshsire puddings. Come out lovely and crispy on the outside, light and fluffy on the inside. Great with loads of gravy on! Jeanette x
