Courgette bread

Our son made a courgette cake and took it into work for his mates.

Courgette Bread • 3 eggs • 1 tsp baking soda • 2 1/2 cups sugar • 1/2 tsp baking powder • 2 cups peeled & grated courgettes • 3 tsp cinnamon • 3 tsp vanilla • 1/2 cup nuts (optional) • 1 cup vegetable oil • 1/2 cup coconut (optional) • 3 cups flour • Mix the eggs and the sugar, add the vanilla & oil, mix well. • Add the courgettes and dry ingredients, mix well. • Bake at 325°F (170°C - mark 3 ) in two 9 X 5 inch loaf pans that are well greased for 1 hour.

Not heard of it Sylvia but it sounds interesting. Hopefully somebody in America will have access to the recipe. Ann Glos

Does anybody have the recipe for courgette bread? When in America I was given a home-baked courgette loaf and the recipe. Well the bread has been eaten and the recipe lost. Pity, but maybe someone has a recipe! Sylvia xxx
