Hi everyone Many thanks for all your responses. I usually use the frozen ones as usually I'm cooking for one. Last time I did a roast I used Lard, but I couldnt find any in either Morrisons or Tesco's when I looked this week so wasnt sure if they had stopped selling it, but I've just looked on Tescos website and they still sell it on there. My sister in law works for them so I will ask her to get me some :-) Many thanks once again for all your hints and Happy Christmas. Karen

Make sure the fat, lard in my case, is very hot when you start and coat the spuds well. Pick a spud that is for roasting or chipping, not all spuds are the same. You can also score the outside and coat with some salt, does wonders for the blood pressure and cholesterol. Roast your carrots as well as parsnips yummy. Ros

Karen I have used the frozen ones with a drop of oil and garlic salt they crisp up good try them before Xmas I also use frozen yorkshire puds which my mum is not amused at LOL but sorry need to find space in oven plus I need to get into the wine and sit down after spending all that money LOL. I use whatever potatoes look the best even baking potatoes. I part boil them, drain them and give them a good shake round the pot. Make sure whatever oil/fat/juices from the meat you use is hot and pop them in. Mine always come out soft inside and crispy on the outside. If you are weight watching who not do the above but put them into a dry roasting dish and coat them with dry mustard. You won't taste the mustard but it will give you the same result. Aileen

Hi If in doubt why not try the frozen ones, roast potatoes that is lol. They are really nice and it will save you all the hassel preparing them. lol

Hiya. I'm doing Christmas dinner this year for my parents. The last time I cooked a roast was Christmas 1999. I always have probs with Roast Potatoes, I like really crunchy roasties. Can anyone give me any hints? - which spuds to get? which fat/oil? etc etc. Many thanks. Karen
