Please tell me about Cheese.

I always understood cheese to be a traditionally long lasting product. After all, the work involved in making it was so that it wouldn't go off in a few days like milk did. It was kept in a cool dry environment and was reputed to get better as it got older. Certainly did in my opinion. Some cheddars lasted so long that they became almost rocklike, but still edible if your teeth were strong enough. Today we buy a piece of cheese hermetically wrapped in plastic which turns green and goes off three days after it's opened. I want my old cheeses back!
