Prove a teaspoon of yeast with a teaspoon of sugar in about 50ml water (1/3 boiling, 1/3 cold) Spend ten minutes on GR boards, until head of yeast is an inch or more Preferably in a glass measuring jug, put a drip of walnut oil or a knob of butter, a spoon of sugar and some boiling water. Stir vigorously to dissolve sugar. Add white flour and the yeast. Mix vigorously. Batter needs to be very very thick but still liquid. Jug must be less than half full. Spend half an hour on GR. By this time, mixture should have doubled in bulk. Heat a large non-stick frying pan over a medium heat. Do NOT add any fat. Desert GR and drop tablespoons of the mixture into the pan. Once the surface of each pancake is dry, flip over and cook briefly. Serve with butter, maple syrup etc. Do not attempt to return to these boards until you have finished the plate: the butter drips through all the holes!
