HELP.....Fruit Cake

Ooooo forgot to mention, this amount is enough for 2 loaf tins ( the smaller ones - 1lb I think) Jeanette x

Here we go........ 1lb Self Raising Flour Half pound of sugar Half pound of hard margerine 1 tsp salt 1 tsp bicarbonate of soda 1 tsp mixed spice 1lb mixed fruit Quarter pound glace cherries 3 eggs Milk to mix Put flour, salt, bicarbonate of soda and mixed spice into a bowl. Rub in margarine. Add all other dry ingredients and mix in. Beat eggs and work into mixture. Add enough milk for it to form a dropping consistency. Grease tin well with butter. Cook for 1 and a half to 1 and three qauarter hours on Gas Mark 3 or 170 degrees C. Can I have some when it's cooked please! lol Jeanettte x

Linda, Hoping Jeanette comes up trumps for yuo because Delias doent look great to me. Qiute complicated. Found another one but it 'll take hours for me to type it in. I'd need to turn on scanner and reboot 'putter to even begin!. You baking today? I never have all the ingreds. when I want them.I made a nice apple tart for dinner this evening tho' Joanxx.

Linda My Mum has an excellent all-in-one type recipe for a nice light fruit cake. She's never had one go wrong yet. I had the recipe until a few weeks ago and she pinched it back so I'll just ring and ask her for it. Jeanette x

Not just off the top of my head, Linda but I could go and look for you - have you a "Delia"? Is it a boiled type fruit cake, really moist and dark or a lighter type you want to make? Joanxx.
