Channel 5 on Sunday have a programme on Britain’s favourite puddings. Good idea for a thread I thought and then realised I don’t have a particular favourite. But I do have hates : can’t even look at tapioca, won’t eat rice pudding after the way school lumped it, don’t like custard very much after school custard.

A few years ago We were invited to a birthday dinner at a good hotel. Couldn’t believe the pudding with was rice pudding ice cream.

Andysmum - THANK YOU! It's all to do with Biga :-D
I'm so pleased it is actually called 'Black bread', and it wasn't a figment of my 3 year old imagination.

Liz, apparently, it's the Biga, which is a type of pre-fermentation used in Italian baking, and, it appears in black bread - which may explain why the bread made in Italy, by one of our group (a chef, as it happens), that was like Black bread, was perhaps made using an Italian recipe.

Been mulling over your ‘special ovens for potatoes’ comment, Sharron. In the end, I googled those four particular words and I believe you may be right - infra-red?

SheilaWestWilts. My Mum's pastry was the talk of the family, her sausage rolls and mincepies were always requested for family get togethers.

I think Maltese black bread has vinegar in. The thing I miss most is Maltese cheesecakes - little concoctions of filo pastry containing ricotta cheese mixed with egg. They are sold hot from bakeries and roadside stalls, they also come with mushy peas inside it but the ricotta ones are my favourite. I am salivating just writing about them.

If you want to raise the bar to OMG....... Wasabi peas! Taste one and it nearly blows your head off. When that's gone down you need to have another because you can't believe that happened and so it goes on until the bag is empty.

I need Wasabi peas NOW!!!! :-D :-D

All I seem to want now is the Lyons apple pie or something equally sweet and fruity.
But I have been a diet ever since one of my foot specialist suggested I may have diabetes. I don’t and I don’t need my foot off ( ;-) ;-) ;-)). Which won’t mean anything to some :-D

My Gran made amazing shortcrust pastry. All my cousins, aunties etc. agree that her mince pies were the best. I haven't tasted any better <3

Or oil. It was properly baked, as I recall. They have special ovens for that don't they?

JoyLouise

JoyLouise Report 8 Sep 2021 13:17

Sharron, perhaps they coated the potato’s skin with butter before baking it?

Sharron Report 8 Sep 2021 12:58

My spud. As far as I remember it was just everything coming together, like that Gister's egg sandwich I bought that time I was hungry. The spud was baked with a nice baked skin and the egg was just the right texture with the balance of egg to salad cream just perfect, it was salad cream as I recall and I think it might have been proper Heinz and now I want one!!!!!!

I had baked avocado with a light cheese sauce in a Notting Hill restaurant decades ago. It was delicious. Suffice to say, haven't seen or heard mention of it since :-(

Maggie, if you google Maltese bread there are lots of options, including recipes. The pictures are all of fairly light-coloured loaves though.

If you google Maltese black bread there are different ones, some of which look great.

I suppose it could be that with health etc regs ingredients have changed over the years, less salt, sugar and other things, different fat for cooking, or even no fat. That together with time changing memories. Never mind the search may be enjoyable.
Sharron was it the egg mayonnaise that was special or the potato?
