Go into Page Layout then Size.
If the size you want isn't listed then go into Margins then Custom Margins and increase or, most likely decrease, the margins until you get the typing area you need.

If it is a plain, ordinary storybook with no pictures, simply use the Word Document which usually comes with its own dimensions.

If you are typing a manuscript for publishers to read and assess whether they will print the book, remember to use double-spacing.

I admit, I am still baffled so you may well be doing something different from anything I have seen.

Don't dimensions of books differ, depending upon what is inside?

Words, no pictures, ie a story, I would expect to be of smaller width and length than an all-picture book.

The same with a young children's story books such as 'Dinner Time' compared with, say, a book by Lee Child.

Do you mean the dimensions of the space that the printed word of your novel will take up? Not sure if it is possible. Have you tried the help facility on Word. Are you on Windows 10? That might make a difference knowing for anyone to help you. I wonder if it is a bit complicated for anyone on here.

You have me baffled, Mark.

I don't know what you mean - pages, words to a page, margins, footnote ???

Someone on here may be able to help.
