Quade/Quaid/McQuaid

I have traced back to my great grandparents marrying in England in 1878 after arriving from Ireland. Neither of them could write and they are married in the name of "Quade". In the 1891 census they are still Quade, but in the 1901 census they and their children are down as "Quaid". I can understand this as if they couldn't read or write they wouldn't know the correct spelling. However, when my grandfather married my grandmother in 1904 he suddenly became "McQuaid" and so did my father and his siblings. Historically, I know the English tried to eliminate the use of Mc, Mac, O, etc. (whether to save writing it or just to show their power I don't know), but why would my grandfather suddenly have become McQuaid? My grandfather had 10 siblings and it makes it very difficult trying to trace the family line when they could be under the different spellings. Any ideas why the change of spellings/names?
