Change of name

I am having trouble with my research because my family seem to keep altering their name. My grandad who was Tevindale-Wood on his marriage certificate was only Wood in the 1901 census records. Obviously he changed his name in the meantime for some reason. It would be interesting to see if there is any record of his change of name. Or, was it possible to simply decide to change your name? I suppose I will always just have to wonder why he did it.
