I always enter women under their maiden name.Have to do this in order to add their parents.
Marriage is not really an issue as I add the fathers of her childen as partners.
The problem is the surnames of her children and I have not resolved this.

She should only be entered on FTM once, as Evans,.

You then connect her to each of her two partners. By default she is treated as married, so, for the unmarried connection, click on the marriage details button, select the general tab and change the relationship to other than married, ie Partners

I would add her as Evans, marry her to William Angliss the add another partner but in the place of marriage put "none"

My GGGGrandmother, maiden name Evans married William Angliss, had children, and then had 4 more children with my GGGGrandfather but never married him

On FTM do I add her to my GGGGrandfather as Angliss or maiden name Evans?
