As Maxine didn't acknowledge the help she received 6 years ago, I doubt that she will see your post

Hello, I don't know if you are still researching. My mother was a Wallington. Edmund Walter Wallington born 15.5.1805 was her Gt. Grandfather and Charles Walter Wallington born 1.1.1846 her Grandfather, he remarried in 4.5.1878 to Margaret Briggs. They had three children, Daisy, Lily and Rose Maud. Rose Maud was my Grandmother.

There was definitely a Wallington+Duck household merger; in 1871:

Name: Edmond Wallington
Age: 14
Estimated Birth Year: abt 1857
Relation: ** Stepbrother **
Gender: Male
Where born: Chatham, Kent, England
Civil Parish: Wouldham
County/Island: Kent
Country: England
Registration district: Malling
Sub-registration district: Aylesford
ED, institution, or vessel: 13
Household schedule number: 111

Household Members:
Name Age
Sarah Duck 20
Stephen Duck 22
Walter Duck 19
Edmond Wallington 14

Ms. Duck's children and that Mr. Wallington's children became step-siblings.

But the Walter there is still too young to be the Walter in question.

Heh. I will now stop thinking "Hoo-am" in my head; the real Charles Walter Wallington in 1871:

Name: Charles Wallington
Age: 26
Estimated Birth Year: abt 1845
Relation: Head
Spouse's Name: Hannah
Gender: Male
Where born: ** Huffum, ** Kent, England
Civil Parish: Chatham
Ecclesiastical parish: St Mary
Town: Chatham
County/Island: Kent
Country: England
Registration district: Medway
Sub-registration district: Gillingham
ED, institution, or vessel: 25
Household schedule number: 49

Household Members:
Name Age
Hannah Buller 68
Charles Wallington 26
Hannah Wallington 22

And by finding the Edmeades-s again in 1871, we see that a Susan Syrott? has taken over as green grocer next door; no Wallingtons.

Well, here he is in 1841:

Name: Edmond Wananton
Age: 30
Estimated Birth Year: abt 1811
Gender: Male
Where born: Kent, England
Civil Parish: Hougham
Hundred: Bewsborough
County/Island: Kent
Country: England
Registration district: Dover
Sub-registration district: Hougham

Household Members:
Name Age
Ann Wananton 30
Edmond Wananton 30
Elizabeth Wananton 4

It actually does appear to say Wananton, but the occupation is "coast guard".

-- on edit: it actually appears to say Warranton. Reminding me of my grx2 grmother whose surname, Fallowell, was entered as Farrowell on one of her children's birth certs.

Daughter Elizabeth would be the one who was 22 in 1861, reasonably. And Ann could plausibly be Mary Ann.

Are we muddling Edmunds? That one -- if the 1841 and 1861 ones were the same -- was a green grocer in 1861.

That's what I was thinking! That's the household I had a look at in 1861 -- it's just that the Walter is Walter G and 8 years old (checked the image, that's what it says).

Mistakes are always possible ...

Found the neighbouring Edmeades household in 1851 at the same address on High Street, but the Wallingtons were not living next door in 1851.

I guess you've tried the censuses! Lucky you -- son Charles wasn't at home in 1851:

Name: Charles Wallington
Age: 5
Estimated Birth Year: abt 1846
Relation: Visitor
Gender: Male
Where born: Hougham, Kent, England
Civil Parish: Hougham
County/Island: Kent
Country: England
Registration district: Dover
Sub-registration district: St James
ED, institution, or vessel: 1c
Household schedule number: 77

Household Members:
Name Age
Mary Andrew 43
Stephen Andrew 38
Charles Wallington 5

There's a household in 1861 that bears a passing resemblance, but the wife (could be a second wife) is Elizabeth, and the Walter G is 8 years old ...

I was going to play with this a bit more, but have to dash off to do some work. Will try to get back to sleuthing later!

I believe Edmund was born around 1805 in the Hougham (Kent area). He later went on to marry Ann Smith. He worked as a commissioned boatman with the coast guard. I believe he had at least one child called Charles Walter born 1846. Any information you have on this would be greatly appreciated.
