I can't see the birth of the George Mellis with parents Alexander and Mary, as in the 1861 census posted by Shirley .
There are no George Mellis's born anywhere in Scotland in 1828.
Per ScotlandsPeople, these are the only George Mellis births in Aberdeenshire 1825-45:

Thank you very much for all the help you have offered we think this is George on the 1851 census , he married Mathilda in South Africa , I can't remember when he was married to Mathilda , we are very grateful for all of the information received from you all we also wish to find Georges parents as well .

Where did he marry Mathilda ?
If it was Scotland then you may find the info on Scotland's people ,but ,they may have married before registration started there which was c 1855
