I strongly suspect that the mother's surname of "Grimes" in the above baptism is a corruption of Graham.

More detail on the parent's marriage above, this from South Tyneside Registrar:

John KANE married Susannah GRAHAM on 22 Jan 1884
Register: R 24
Entry: 49

So they married a few months ahead of Mark's birth.

Jennifer, it seems he may simply have decided to use his mother's maiden name.
