The 1869 death is a possibility but I think the age on the death record for 1864 matches better as she was recorded as age 75 on the 1861 census.

Sorry, but you can't assume she didn't leave a Will

All that has been shown is that there is no Probate record.

Only probate I can see is for a woman who died Durham 1866. Executor is daughter Eliza.

There only seem to be two likely Elizabeth Parkinsons in the Probate Calendar. One died in Poulton-le-Fylde in 1864 and the other in Gateshead in 1866. I couldn't find one around 1869. Perhaps she didn't leave a will

It's free to search though you have to pay to download any wills you find. I have had a look for Elizabeth Parkinson in 1864 and 1869 and there was nothing showing for her on those dates.

PARKINSON Elizabeth Head U F 75 Annuitant Co. Durham - Bishopton

I am trying to find a Will for her. On FreeBMD there are two possible deaths 1865 and 1869. Could someone please take a look at the probate/will index.
