To be sure of father's name you need her marriage certificate.

Definitely says Son for Poulen on the 1881and the age is quite clear. There are other McKeone births in Farnham but none that could be his.

Knowing that Mary was Spanish, the son in 1881 census may have a spanish name. Maybe one of these ????

Palban - Palben - or something else similar.

If she had a spanish accent then the numerator may not have understood what she said and just wrote down what he thought she was saying, after all he did not note Alice's name correctly.
It could also be just a nickname?
