At least it's not just me then.

I've got Joseph from 1841 up until 1871 (died 1880) and Matilda from 1841 through until 1911 (died 1912). They married in 1856.

I've tried searching with various spellings and searching with just Christian names and yob all with no luck. I've been searching on Ancestry.

I think you might be right about missing returns

I looked on GR (Hague & variants) under Derby St Alkmund and there are NONE showing for 1861. Yet there are Hagues in the same area in 1851 and 1871.

Do we have some missing returns?
