I found this, but the details differ slightly to what you give:
Registration event: death
Name: HUTTON, William Date of death: 24 August 1896 Age: 43 Place of death: New York Place of birth: British,Peterhead Belonging to service: Ship's name: City Of Athens Series: BT334 - Registers and Indexes of Births, Marriages and Deaths of Passengers and Seamen at Sea Box: 0015 Page: 9
This man was a carpenter of Mainden Street, Peterhead.
Cause of death was phthisis pulmonallis.
Will send you the image.
ADDED: Just checked death date again on image and it's very clear - how clear was the inscription on the headstone?

This 1891 census would be the man from the above death record:
HUTTON, William Head Married M 42 1849 Ship Carpenter Peterhead, Aberdenshire HUTTON, Mary Wife Married F 36 1855 Ship Carpenter Wife Peterhead, Aberdenshire HUTTON, Mary Jane Daughter F 12 1879 Scholar Peterhead, Aberdenshire HUTTON, William Son M 10 1881 Scholar Peterhead, Aberdenshire HUTTON, Maggie Daughter F 8 1883 Scholar Peterhead, Aberdenshire HUTTON, Andrew Son M 6 1885 Scholar Peterhead, Aberdenshire HUTTON, Annie Smith Daughter F 4 1887 Peterhead, Aberdenshire HUTTON, Alexander J S Son M 2 1889 Peterhead, Aberdenshire HUTTON, Thomas Son M 0 (11 M) 1891 Peterhead, Aberdenshire
Piece: 232 Folio: 12 Page: 3 Registration District: Peterhead Civil Parish: Peterhead
Address: Maiden Street, Peterhead County: Aberdeenshire
So it looks like the age on the death record was a few years out - possibly the crew didn't know his exact details.
EDIT: I see the daughter Annie has middle name Smith so quite likely right.

Do you think this may be him?
