You're very welcome David.
I've sent you another image which I think may well be his son.

Another record:
Merchant Navy Seamen 1835-1941 Print Close Last name: FLIGHT First names: Herbert Age: Day of birth: 23 Month of birth: February Year of birth: 1875 Place of birth: Manchester County/country of birth: Lancashire Card type: CR10 Discharge number: 656820 Identity certificate no.: 803138 Series: BT350 Date range: 1918-1921
The birthplace on this transcription is utter rubbish. I'm pretty sure that on the original it says Winchester (there's no mention of a county at all) which has been mistranscribed as Manchester then the Lancashire has been assumed.
The day and month of birth are probably right, but the year is probably a fib so he could compete for work along with younger men.
I've sent the original to David as it has a photo.

Although the age is out on this, I'm convinced it's him:
New York, Passenger Lists, 1820-1957
Name: Herbert Flight Arrival Date: 9 Jan 1925 Birth Date: abt 1875 Age: 50 Gender: Male Ethnicity/ Nationality: English Port of Departure: Southampton, England Port of Arrival: New York, New York Ship Name: Empress of France
Also on the list is a Fredk Flight, age 24 - a mess cook.
Seems like his son followed his career path.

David, can't be too sure about the medal roll (strongly suspect it is him, though).
I'm pretty sure the chap from the census and the shipping records are the same one, though. On some of the crew lists his birth year is given as 1875 and I believe he may have chopped a few years off his age to keep his job.
Just posting the 1901 for our own reference:

There are numerous crew lists for a Herbert Flight born 1874/5 - was yours a seaman?
He may have been away when the census was taken?
