Born James Hay but by 15 James Mason

There is no RCE for my Great Grandfather stating a change in name like there is for his sister (different fathers). In the 1891 Census his name is James Hay as it is on his birth record. In the 1901 census his name is down as James Mason.

Born in Falkland, Scotland in 1885. There is no family written or oral history to state why the name change happened. I do know that my Grandfather was born with both last names on his birth certificate that he eventually had changed.

If you could give me some suggestions as to where to look or how to solve the mystery it would be greatly appreciated.
