Julia Taylor nee Keeton fled to Canada - HELP!!!!

I know my great great grandmother (Julia Taylor nee Keaton/Keeton B-16th Jan 1848) absconded to Canada - Vancouver I believe - with the family inheritance (illegally!) but her trail has gone cold in the UK after the 1881 census, in which she was the head of household after her husband Samuel Taylor had died. They lived in the parish of St Mary Magdalene, Bermondsey, London.
I'm sure she didn't go to Canada until after the 1891 cenus or even the 1901 census, as my nan remembered her and wasn't born until 1895. I've a feeling it was in the early 1900's, and according to family folk law, she followed her 'illigitimate' daugter (Amy O'Rourke) out there - I can find no mention of HER whatsoever!! It's a mystery!
One of my questions is - how did people get to Canada, from where, and to where, and how do you find them in Canada once they got there????
ALSO, are there any other good sources of info other than the census I can look up in the UK to find her after 1881 - she can't have just vanished!
I have a feeling this ellusive lady may have taken the name O'Rourke at some point but still have no proof of this and don't think she was legally married to an O'Rourke (Amy's father?) this is all making her very difficult to find and ever more interesting, but very frustrating!!! HELP SOMEONE!!!!
